Vegan Mushroom Pho Boys

This Pho Boy is made with fried mushrooms and is sure to hit the spot. It's easy to make, packed with flavor and can be served warm for that perfect comforting meal. A hoagie bun is filled with vegan cheese, tasty mushrooms and topped with either shredded lettuce or coleslaw mix, plus a hint of spice from jalapeños (optional). All in all, you have an irresistibly delicious sandwich that's ready in no time. So give it a try - you won't regret it!




Ingredients:

  • 2 cups of sliced mushrooms (such as Portobello, oyster, or shiitake)

  • 1 tablespoon olive oil

  • Salt and pepper, to taste

  • 4 hoagie buns

  • 2 tablespoons vegan mayonnaise

  • 1 tablespoon Sriracha sauce

  • 4 slices of vegan cheese

  • 2 cups of shredded lettuce or coleslaw mix

  • Sliced jalapeños (optional) Instructions:

  1. Preheat oven to 375 degrees Fahrenheit. Line a baking sheet with parchment paper.

  2. In a bowl, mix together the sliced mushrooms with olive oil and season with salt and pepper. Spread the mushrooms in an even layer onto the lined baking sheet and bake for 15 minutes.

  3. While the mushrooms are baking, prepare the buns by spreading vegan mayonnaise on one side of each bun followed by a drizzle of Sriracha sauce on top. Place two slices of vegan cheese on each bottom bun and set aside.

  4. Once cooked, remove the mushrooms from the oven and let cool slightly before adding them to each sandwich half on top of the cheese slices. Finish off each sandwich by topping it with lettuce or coleslaw mix and jalapeños (optional). Serve warm!
